Delectable Chestnut Fritters

Ingredients
- 300 g of cleaned and boiled chestnuts
- 100 g of flour
- 2 eggs
- 50 g of sugar
- 1 packet of vanilla sugar
- A pinch of salt
- 1/2 cup of milk (about 120 ml)
- Oil for frying (as needed)
- Powdered sugar for decorating (optional)
Preparation
- Start by passing the boiled chestnuts through a potato ricer or food mill to get a fine puree.
- In a bowl, combine the chestnut puree with flour, sugar, salt, and vanilla sugar. Mix well until you have a homogeneous mixture.
- Separate the yolks from the egg whites. Add the yolks to the chestnut mixture and blend well.
- Beat the egg whites in a separate bowl until they are firm and frothy.
- Gently fold the beaten egg whites into the chestnut mixture, trying not to deflate them.
- In a large pan with high sides, heat a good amount of oil for frying.
- When the oil is hot, use a spoon to drop portions of the mixture into the oil and fry for a couple of minutes on each side, until the fritters are puffed up and golden.
- Drain the fritters on paper towels to remove excess oil.
- Serve the fritters hot, dusted with powdered sugar if desired.
