Tartlets with Skyr Cream, Pears, and Cashews

The tartlets with Skyr cream, pears, and cashews are a delicious and relatively simple dessert to prepare. Here is the recipe, with an Italian touch to honor the culinary roots of our country.

Ingredients

For the tartlet base:

  • 200 g of type 00 flour
  • 100 g of cold butter, cubed
  • 50 g of icing sugar
  • 1 medium egg
  • A pinch of salt

For the Skyr cream:

  • 250 g of Skyr (or Greek yogurt if not available)
  • 2 tablespoons of wildflower honey
  • 1 teaspoon of vanilla extract

For the topping:

  • 2 ripe pears, peeled and diced
  • 50 g of toasted and chopped cashews
  • Juice of 1/2 lemon

Preparation

  1. For the tartlet base, in a large bowl, mix the flour with the icing sugar and pinch of salt. Add the cold butter and start to work the dough with your fingertips until it becomes crumbly.
  2. Incorporate the egg and work quickly until a smooth dough ball is formed. Wrap it in cling film and let it rest in the refrigerator for at least 30 minutes.
  3. In the meantime, prepare the cream by mixing the Skyr with honey and vanilla extract in a bowl until smooth. Keep refrigerated.
  4. Roll out the tartlet dough on a lightly floured surface until about 5 mm thick. Cut out pastry discs and line the previously buttered and floured tartlet molds with them.
  5. Prick the bottom of the tartlets with the tines of a fork, cover them with a piece of parchment paper and fill with dried beans or pie weights. Bake in a preheated oven at 180 °C for about 15 minutes.
  6. Remove the tartlet bases from the oven, take out beans and paper, and let cool completely.
  7. For the topping, in a pan, cook the diced pears with the lemon juice until they have softened. Let cool.
  8. Fill the tartlet bases with the Skyr cream, add the pears and sprinkle with the chopped cashews.
  9. Serve the tartlets at room temperature or chilled from the refrigerator.
