Ingredients

  • For the shortcrust pastry:

    • 300 g of all-purpose flour
    • 150 g of cold butter, cut into cubes
    • 100 g of granulated sugar
    • 1 large egg
    • 1 egg yolk
    • Zest of 1 lemon
    • A pinch of salt
  • For the yogurt cream:

    • 250 g of Greek yogurt (or natural yogurt)
    • 200 ml of fresh liquid cream
    • 70 g of powdered sugar
    • 8 g of gelatin sheets (fish glue)
    • 1 lemon (juice and grated zest)
    • Fresh fruit for decoration (optional, e.g., strawberries, kiwi, blueberries)

Preparation

  1. Start by preparing the shortcrust pastry: in a large bowl or on a work surface, sift the flour, add the sugar, a pinch of salt, and the grated lemon zest. Add the cold butter cubes and start working with your fingertips until you get a sandy mixture.
  2. Make a well in the center of the mixture and add the whole egg and the yolk, then knead quickly until you form a smooth, even dough. Wrap the shortcrust pastry in cling film and let it rest in the refrigerator for about 30 minutes.
  3. Roll out the shortcrust pastry into an even layer and lay it in a previously buttered and floured tart pan, creating a slightly raised edge. Prick the bottom with a fork and bake in a preheated oven at 180 °C for about 20-25 minutes or until golden brown. Let it cool completely.
  4. While the base is baking, prepare the yogurt cream: soak the gelatin sheets in cold water for about 10 minutes. Heat the lemon juice without bringing it to a boil, squeeze the gelatin, and dissolve it in the warm juice.
  5. In a bowl, mix the yogurt with the powdered sugar and the grated lemon zest. Add the lemon juice with the dissolved gelatin and mix well.
  6. In another bowl, whip the fresh cream and gently fold it into the yogurt mixture to avoid deflating it.
  7. Pour the yogurt cream onto the cold tart base and level with a spatula.
  8. Let it cool in the refrigerator for at least 4 hours or until the cream is well set.
  9. Once cooled, decorate the tart with fresh fruit of your choice.
