Tart with ruby chocolate

Ruby chocolate is a type of chocolate characterized by its natural pink color and a taste that is said to be a mix between fruity and slightly tart. This makes it a fascinating ingredient for creating a dessert with an original touch and a refined taste.
Ingredients
- 300 g of type 00 flour
- 150 g of cold butter, cubed
- 100 g of icing sugar
- 1 whole egg
- 1 egg yolk
- A pinch of salt
- Grated zest of 1 untreated lemon
- 200 g of Ruby chocolate
- 100 ml of fresh cream
Preparation
- In a large bowl, mix the flour and cold butter, working them with your fingertips until you get a mixture resembling coarse sand.
- Add the icing sugar, pinch of salt, and grated lemon zest. Mix well the dry ingredients.
- Create a well and add the whole egg and the yolk in the center. Work all the ingredients quickly until you have a smooth dough.
- Form a ball with the dough, wrap it in cling film and let it rest in the refrigerator for about 30 minutes.
- Roll out the dough on a lightly floured surface until it is about 4-5 mm thick and use it to line a buttered tart mold.
- Prick the bottom of the dough with the tines of a fork and bake blind in a preheated oven at 180 °C for about 15-20 minutes or until golden brown. Allow to cool.
- In the meantime, prepare the Ruby chocolate ganache. Heat the cream without bringing it to a boil and then pour it over the chopped Ruby chocolate, letting it melt for a few minutes. Then mix until you get a smooth and shiny cream.
- Pour the ganache over the cooled tart base and let it set in the refrigerator for at least 2 hours before serving.
For decoration, you can use berries, edible flowers, or a dusting of icing sugar, which pleasantly contrast with the bold color of the Ruby chocolate.
