Tart with Orange Cream

Ingredients

For the shortcrust pastry:
- 300g of 00 flour
- 150g of cold butter, cubed
- 100g of powdered sugar
- 1 large egg
- Grated zest of 1 lemon
- A pinch of salt

For the orange cream:
- 4 egg yolks
- 100g of sugar
- 50g of 00 flour or cornstarch
- 250ml of fresh orange juice (about 2-3 oranges, depending on size)
- Grated zest of 1 orange
- 50ml of water
- 30g of butter
Preparation

Start by preparing the shortcrust pastry. In a large bowl, mix the flour with powdered sugar and a pinch of salt. Add the cold cubed butter and quickly work the mixture with your fingertips to obtain a sandy consistency.

Add the egg and grated lemon zest and work the dough until it forms a smooth ball. Wrap the dough in cling film and let it rest in the refrigerator for at least 30 minutes.

Meanwhile, prepare the orange cream. In a saucepan, beat the egg yolks with sugar until frothy. Incorporate the flour or cornstarch and gradually add the orange juice and water, making sure not to create lumps.

Place the saucepan over low heat and continue stirring as the cream thickens. As soon as it begins to boil, remove the pan from the heat and add the grated orange zest and butter. Stir well until the butter has completely melted into the cream. Let it cool covered with cling film touching the surface to prevent a “skin” from forming.

Take the pastry dough out of the refrigerator, roll it out on a lightly floured surface, and line a previously buttered and floured tart mold, leaving a high edge. Prick the base with a fork.

Pour the cooled orange cream onto the frolla base and level with a spatula.

Bake in a preheated oven at 180°C for about 35-40 minutes or until the pastry is golden and the cream has set slightly.

Let the tart cool completely before removing it from the mold and serving it.
