Matcha tea cream tart

Ingredients

For the Shortcrust Pastry:

  • 300 g of 00 flour
  • 150 g of cold butter, cubed
  • 120 g of icing sugar
  • 1 large egg
  • 1 egg yolk
  • A pinch of salt
  • Grated zest of 1 lemon (optional)

For the Matcha Tea Cream:

  • 500 ml of whole milk
  • 4 egg yolks
  • 100 g of sugar
  • 40 g of 00 flour or cornstarch
  • 2 tablespoons of matcha tea powder
  • A pinch of salt

Preparation

  1. Shortcrust Pastry: In a bowl or on a pastry board, mix the flour with the icing sugar and a pinch of salt. Add the cold butter cubes and start to ‘sablé’ the mixture with your fingertips until it resembles fine breadcrumbs. Add the egg, egg yolk, and grated lemon zest, and quickly knead until a ball is formed. Wrap the shortcrust pastry in cling film and let it rest in the refrigerator for at least 30 minutes.

  2. Matcha Tea Cream: Heat the milk until almost boiling. Meanwhile, in a large bowl, whisk the egg yolks with the sugar until light and frothy. Gradually add the sifted flour, continuing to mix to avoid lumps. Gradually add the hot milk to the egg yolk mixture, stirring constantly. Pour the mixture into a saucepan, add the matcha tea, and cook over medium heat, stirring continuously until the cream thickens. Remove from the heat and let it cool, covering it with cling film to prevent a skin from forming on the surface.

  3. Assembly and Baking: Preheat the oven to 180 °C. Roll out the shortcrust pastry into an even layer and line a previously buttered and floured tart tin. Prick the base of the pastry with a fork, then pour the matcha tea cream and level it with a spatula. Bake for about 40-45 minutes or until the shortcrust pastry is golden and the cream is well set.

Once baked, let the tart cool completely before unmolding and serving. If desired, you can decorate the surface with a dusting of matcha tea before serving for an even more intense color effect.
