Tart with Mascarpone and Chocolate Chips

Ingredients
For the shortcrust pastry:
- 300 g of type 00 flour
- 150 g of cold butter, cubed
- 120 g of icing sugar
- 1 large egg
- 1 egg yolk
- Grated zest of 1 lemon
- A pinch of salt
For the filling:
- 250 g of mascarpone
- 100 g of icing sugar
- 1 large egg
- Chocolate chips to taste (according to preference)
- 1 vanilla pod or vanilla extract
Preparation
- To prepare the shortcrust pastry, make a well with the flour on a work surface and add the cold, cubed butter, icing sugar, pinch of salt, lemon zest, whole egg, and yolk to the center. Work the ingredients quickly to obtain a smooth, homogenous dough. Shape into a ball, wrap in cling film, and let it rest in the refrigerator for at least 30 minutes.
- For the filling, in a bowl mix the mascarpone with the icing sugar, egg and seeds scraped from the vanilla pod or vanilla extract, until you get a homogenous mixture. Add the chocolate chips and mix gently.
- Preheat the oven to 180 °C.
- Roll out the pastry dough into a sheet about 3-4 mm thick and line a previously buttered and floured tart pan, creating an edge. Prick the base with a fork.
- Pour the mascarpone filling into the pastry shell and spread it evenly. Sprinkle the surface with additional chocolate chips as you like.
- Bake at 180 °C for about 35-40 minutes or until the tart is golden and the mascarpone is well set.
- Allow to cool completely before unmolding and serving.
You can garnish the tart with additional chocolate chips, fresh fruit slices such as strawberries or raspberries, or a dusting of icing sugar for a final touch of sweetness.
