Tart with Mascarpone and Chocolate Chips

Ingredients

For the shortcrust pastry:

  • 300 g of type 00 flour
  • 150 g of cold butter, cubed
  • 120 g of icing sugar
  • 1 large egg
  • 1 egg yolk
  • Grated zest of 1 lemon
  • A pinch of salt

For the filling:

  • 250 g of mascarpone
  • 100 g of icing sugar
  • 1 large egg
  • Chocolate chips to taste (according to preference)
  • 1 vanilla pod or vanilla extract

Preparation

  1. To prepare the shortcrust pastry, make a well with the flour on a work surface and add the cold, cubed butter, icing sugar, pinch of salt, lemon zest, whole egg, and yolk to the center. Work the ingredients quickly to obtain a smooth, homogenous dough. Shape into a ball, wrap in cling film, and let it rest in the refrigerator for at least 30 minutes.
  2. For the filling, in a bowl mix the mascarpone with the icing sugar, egg and seeds scraped from the vanilla pod or vanilla extract, until you get a homogenous mixture. Add the chocolate chips and mix gently.
  3. Preheat the oven to 180 °C.
  4. Roll out the pastry dough into a sheet about 3-4 mm thick and line a previously buttered and floured tart pan, creating an edge. Prick the base with a fork.
  5. Pour the mascarpone filling into the pastry shell and spread it evenly. Sprinkle the surface with additional chocolate chips as you like.
  6. Bake at 180 °C for about 35-40 minutes or until the tart is golden and the mascarpone is well set.
  7. Allow to cool completely before unmolding and serving.

You can garnish the tart with additional chocolate chips, fresh fruit slices such as strawberries or raspberries, or a dusting of icing sugar for a final touch of sweetness.
