Tart with fig jam

We will prepare together a delicious Tart with fig jam, a classic dessert that tastes of home and tradition. Here are the ingredients for a tart of about 24 cm in diameter:

Ingredients

  • 300 g of flour 00
  • 150 g of cold butter, cubed
  • 120 g of sugar
  • 1 whole egg and 1 yolk
  • Grated zest of 1 lemon
  • A pinch of salt
  • Fig jam to taste

Preparation

  1. In a large bowl, mix the flour with sugar, lemon zest, and a pinch of salt.
  2. Add the cold butter, cut into cubes, and start to work the mixture with your hands to get a sandy compound.
  3. Make a well and add the whole egg and the yolk in the center, then knead quickly to avoid overheating the mixture.
  4. Form a ball with the dough, wrap it in cling film and let it rest in the refrigerator for at least 30 minutes.
  5. After the resting time, roll out two-thirds of the dough on a lightly floured surface until about 5 mm thick.
  6. Gently transfer the shortcrust pastry base into a previously buttered and floured pan and prick the bottom with a fork.
  7. Spread an even layer of fig jam over the shortcrust pastry base.
  8. With the remaining dough, shape strips or decorations at will and arrange them over the fig jam.
  9. Bake the tart in an already hot oven at 180 °C for about 30-35 minutes or until the pastry is golden.

Allow the tart to cool completely before serving.

Curiosity

The tart is a very versatile dessert: if you do not have fig jam or want to try other flavors, you can use any kind of jam or marmalade at your disposal. In some Italian variants, custard is also added above the first layer of jam, for an even more delicious result.
