Ginger and Turmeric Taralli

Ginger and turmeric taralli are a tasty and aromatic snack, perfect for those who love intense flavors and a touch of exoticism. Here is the recipe to prepare them.

Ingredients

  • 500 g of 00 flour
  • 200 ml of white wine
  • 100 ml of extra virgin olive oil
  • 10 g of salt
  • 1 teaspoon of ginger powder
  • 1 teaspoon of turmeric powder
  • Fennel seeds (optional)
  • Ground black pepper (optional)

Preparation

  1. In a large bowl, mix the flour with the salt, ginger, and turmeric, adding also the fennel seeds and black pepper if you want a bolder taste.
  2. Add the extra virgin olive oil and start to knead.
  3. Gradually pour in the white wine and continue to work the dough until it becomes smooth and uniform.
  4. Take small portions of the dough and work them by forming thin ropes. Join the ends of the ropes to give the taralli their typical ring shape.
  5. In a large pot, bring water to a boil. Plunge the taralli a few at a time and scoop them out with a slotted spoon as soon as they float to the surface.
  6. Arrange the taralli on a baking tray lined with parchment paper and let them dry for a few hours or until they are quite dry to the touch.
  7. Bake the taralli in a preheated oven at 200 °C for about 20-25 minutes or until they start to golden.
  8. Let cool on a wire rack before serving.

Taralli are a very popular snack in Southern Italy, particularly in Puglia and Campania. Traditionally, they’re prepared with white wine and olive oil and can include flavors such as fennel seeds, pepper, or chili. Their special feature is double cooking: first immersed in boiling water and then baked in the oven, somewhat like bagels. Adding ginger and turmeric isn’t traditional but is a tasty way to bring a new twist to this Italian classic.
