Tandoori Chicken Skewers with Yogurt Sauce

Tandoori chicken skewers are a beloved dish in Indian cuisine, known for their spicy flavor and vibrant color, mostly given by the marinade based on yogurt and Tataki spices. I can suggest it with a yogurt sauce to accompany it, allowing for a touch of creaminess and freshness to the dish. Here’s how to prepare them:

Ingredients

  • 500 g of chicken breast, cut into cubes
  • 200 g of Greek yogurt (for the marinade)
  • 1 clove of garlic, finely chopped
  • 1 tablespoon of lemon juice
  • 1 tablespoon of tandoori paste or tandoori spice blend in powder
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of paprika
  • 1/2 teaspoon of turmeric
  • Salt, as needed
  • Extra virgin olive oil
  • Skewer sticks, previously soaked in water

For the yogurt sauce:

  • 200 g of Greek yogurt
  • 1 tablespoon of fresh mint, chopped
  • 1 tablespoon of fresh coriander, chopped
  • 1 small garlic clove, grated or chopped
  • 1 teaspoon of lemon juice
  • Salt and pepper, to taste

Preparation

  1. In a large bowl, mix the yogurt with garlic, lemon juice, and the spices: tandoori, cumin, coriander, paprika, turmeric, and a pinch of salt.
  2. Add the chicken cubes to the bowl and mix well to cover them all with the marinade. Marinate in the fridge for at least 1 hour, or ideally overnight.
  3. Turn on the grill in the oven or prepare the barbecue.
  4. Thread the marinated chicken cubes onto the skewers. Arrange the skewers on a grill and brush with a little olive oil.
  5. Cook the skewers for 10-12 minutes or until the chicken is well cooked and has a nice golden color, turning halfway through cooking.

For the yogurt sauce:

  1. In a small bowl, combine yogurt with mint, coriander, garlic, lemon juice, salt, and pepper. Mix until you get a smooth sauce.
  2. Taste and adjust the seasoning if necessary.

Serve the tandoori chicken skewers with the fresh and fragrant yogurt sauce.

Trivia

“Tandoori” refers to the tandoor, the clay oven used to cook various types of dishes in Indian cuisine. The “tandoori masala” spice blend consists of a combination of aromatic spices that gives the dish its distinctive flavor and red color.

For an Italian twist on the dish, you could use Mediterranean herbs in the marinade and prepare a side sauce with yogurt and fresh basil, creating a delightful fusion of Indian and Italian cuisine.
