Tagliolini with Lobster

Ingredients

  • 1 fresh lobster of about 600-700 grams
  • 250 grams of egg tagliolini
  • 1 clove of garlic
  • 1 bunch of fresh parsley
  • 250 ml of tomato passata
  • 1 glass of dry white wine
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Begin with the preparation of the lobster. Bring a pot of salted water to a boil and immerse the lobster. Boil for about 8-10 minutes, then drain and let it cool. When it’s cool, detach the tail and the claws, then gently extract the meat.

  2. Meanwhile, in a large pan, heat a drizzle of extra virgin olive oil with a garlic clove. When the garlic starts to sizzle, remove it and add the lobster meat cut into pieces.

  3. Deglaze with a glass of white wine and let the alcohol evaporate.

  4. Add the tomato passata, salt and pepper, and cook over low heat for 10-15 minutes.

  5. In the meantime, bring a pot of salted water to a boil and cook the tagliolini according to the package instructions until al dente.

  6. Drain the pasta and transfer it to the pan with the lobster sauce. Sauté over high heat for a couple of minutes, stirring gently.

  7. Transfer the tagliolini with lobster onto plates and garnish with chopped fresh parsley before serving.
