Tagliatelle radicchio and speck

Ingredients
- 320 g of tagliatelle
- 200 g of Treviso radicchio
- 100 g of speck, cut into strips
- 1/2 glass of white wine
- 1 shallot
- Extra virgin olive oil to taste
- Salt to taste
- Pepper to taste
- Grated Parmesan cheese (optional)
Preparation
- Clean the radicchio by removing the harder outer parts and then cut it into strips.
- Finely chop the shallot and fry it in a pan with a drizzle of extra virgin olive oil. When the shallot becomes transparent, add the speck and let it brown until it becomes crispy.
- Add the cut radicchio to the pan, fry for a few minutes, then deglaze with the white wine and let it evaporate.
- Cook the tagliatelle in plenty of salted water, following the package instructions to achieve an al dente texture.
- Drain the tagliatelle and transfer them to the pan with the radicchio and speck. Sauté everything to mix the ingredients well.
- Serve immediately, adjusting salt and pepper to taste. If you like, you can add a sprinkling of grated Parmesan cheese.
