Tagliatelle with Porcini Mushrooms and Prawns
17/11/2023- Add the porcini mushrooms to the pan and let them cook for about 5-7 minutes. The mushrooms should become slightly golden.
- Pour in the prawns and sauté for another 2-3 minutes. Then deglaze with white wine and allow the alcohol to evaporate.
- Season with salt and pepper to taste and cook everything for about 10 minutes, until the prawns are well cooked and the flavors are well combined.
- Meanwhile, bring a pot of salted water to a boil and cook the tagliatelle until desired doneness, generally al dente.
- Drain the pasta and add it to the pan with the mushroom and prawn sauce. Toss everything together for a few minutes, so that the tagliatelle absorbs the flavor of the sauce well.
- Turn off the heat and, if desired, add chopped fresh parsley and a sprinkle of grated Parmesan cheese.

Italian culinary tradition often does not endorse the pairing of cheese with seafood. However, in this recipe, Parmesan can be added if desired to enrich the dish with an extra note of flavor.
