17/11/2023Certainly! The tagliatelle with porcini mushrooms and grilled vegetables is a rich and flavorful dish, perfect for those who love the intense tastes of the forest and the grill. Here is the recipe.
Ingredients
- 300 g of egg tagliatelle
- 300 g of fresh porcini mushrooms
- 1 zucchini
- 1 yellow pepper
- 1 red pepper
- 1 small eggplant
- 2 cloves of garlic
- Fresh parsley, to taste
- Extra virgin olive oil, as needed
- Salt and pepper, to taste
- Grated Parmesan cheese, optional
Preparation
- Start by preparing the grilled vegetables: wash and cut the zucchini, peppers, and eggplant into slices or strips about one centimeter thick.
- Grill the vegetables on a hot grill or griddle until they are nicely marked and tender. Season them lightly with salt and set aside.
- Clean the porcini mushrooms: remove any dirt with a damp cloth and slice them not too thinly.
- In a large pan, heat a drizzle of extra virgin olive oil and add a peeled and crushed garlic clove.
- Once the garlic is golden, remove it and add the porcini mushrooms. Cook over medium-high heat for about 10 minutes, until the mushrooms have released their water, and it has evaporated. Adjust with salt and pepper.
- In the meantime, bring a pot of salted water to a boil and cook the tagliatelle al dente.
- Once ready, drain the pasta and add it to the pan with the porcini mushrooms. Toss everything together for a few minutes to combine the flavors.
- Now add the grilled vegetables and mix gently.
- Serve the tagliatelle hot, garnished with chopped fresh parsley and a sprinkling of grated Parmesan cheese, if desired.
Interesting Facts
Tagliatelle is a type of egg pasta typical of Emilia-Romagna and some areas of Marche and Umbria. According to tradition, the width of tagliatelle should be 1/12,000 of the Altar of the Basilica of San Petronio in Bologna, which translates to about 8 millimeters in width after cooking. This measurement is also celebrated with a golden sample stored at the Chamber of Commerce in Bologna. Combining this Italian pasta classic with the rustic flavor of porcini and the sweetness of grilled vegetables results in a balanced yet distinctive-tasting dish.
