Tagliatelle with Octopus

Ingredients

  • 300 g of fresh tagliatelle
  • 1 medium-sized octopus, previously cleaned and boiled
  • 2 cloves of garlic
  • 400 g of peeled or fresh tomatoes
  • Fresh parsley to taste
  • 1 chili pepper (optional)
  • Salt to taste
  • Pepper to taste
  • Extra virgin olive oil

Preparation

  1. Start by boiling the octopus in a pot with plenty of salted water until it becomes tender (it will take about 40-50 minutes depending on the size). Once boiled, let it cool down and then cut it into pieces.
  2. In a large pan, heat a drizzle of extra virgin olive oil and sauté the peeled garlic cloves. If you like a spicy touch, also add the chili pepper.
  3. Add the cut octopus into the pan and let it brown for a few minutes.
  4. Pour the peeled tomatoes into the pan and crush them with a fork to release the juice. Cook everything over medium heat for about 10-15 minutes. Adjust with salt and pepper.
  5. Meanwhile, bring a large pot of salted water to a boil and cook the tagliatelle according to the package instructions for al dente.
  6. Drain the pasta and transfer it to the pan with the octopus sauce. Add some of the cooking water if necessary to keep the sauce moist and mix the pasta well.
  7. Sprinkle with the chopped fresh parsley and serve immediately.

The dish is ready to be enjoyed. Remember to remove the garlic cloves before serving unless they are to the guests’ liking.
