Tagliatelle with Walnut Sauce

Ingredients for the Walnut Sauce:

  • 200 g of shelled walnuts
  • 100 ml of cooking cream
  • 50 g of grated Parmesan cheese
  • 2 cloves of garlic
  • Salt and pepper to taste
  • Milk as needed (if necessary to soften)
  • A bunch of fresh parsley, chopped

Ingredients for the Pasta:

  • 350 g of fresh or dried tagliatelle

Preparation of the Sauce:

  1. Place the walnuts in a bowl with hot water for a few minutes, then drain and remove the outer skin if possible.

  2. In a blender, blend the walnuts with garlic, a pinch of salt, and pepper until you get a coarse paste.

  3. Add the cream and Parmesan and continue blending until you get a smooth cream. If the mixture is too thick, add a little milk to soften.

  4. Transfer the walnut cream to a pan and heat on low.

  5. Meanwhile, bring a pot of salted water to a boil and cook the tagliatelle until al dente.

  6. Drain the pasta, reserving some of the cooking water.

Completion:

  1. Add the tagliatelle to the walnut cream in the pan, adding a little of the reserved cooking water to reach the desired consistency and stir gently.

  2. Serve the tagliatelle with the walnut sauce, garnishing with chopped fresh parsley.
