Lemon Tagliatelle and Shrimp

Ingredients

  • 320 g of egg tagliatelle
  • 400 g of fresh or frozen shrimp
  • 1 lemon (grated zest and juice)
  • 2 cloves of garlic
  • Fresh parsley to taste
  • 200 ml of fresh cream
  • Extra virgin olive oil
  • Salt to taste
  • Fresh ground black pepper to taste

Preparation

  1. Start by cleaning the shrimp: remove the shell and the intestinal thread. If you prefer, you can also leave some whole to use as a garnish on the dish.
  2. Bring a large pot of salted water to a boil to cook the tagliatelle.
  3. While waiting for the water to boil, in a large pan, heat a drizzle of extra virgin olive oil and lightly sauté the garlic cloves without browning them.
  4. Add the shrimp to the pan and cook for a few minutes until they turn pink. Deglaze with the lemon juice and let the alcohol evaporate.
  5. Add the grated lemon zest and fresh cream, then cook over low heat until you get a slightly thickened cream. Season with salt and add a sprinkling of fresh ground black pepper.
  6. Cook the tagliatelle in boiling water until the desired doneness is reached.
  7. Drain the tagliatelle al dente and transfer them to the pan with the shrimp and lemon cream. Stir well to mix everything together.
  8. Serve immediately, garnishing the plates with chopped fresh parsley and, if you wish, decorate with some whole shrimp you had set aside.
