Tagliatelle with Chicken and Porcini Mushrooms

Ingredients

  • 300 g of egg tagliatelle
  • 200 g of chicken breast
  • 150 g of fresh porcini mushrooms or rehydrated if dried
  • 1 clove of garlic
  • 100 ml of cooking cream
  • Fresh parsley to taste
  • Extra virgin olive oil to taste
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish
  • If available, a glass of dry white wine

Preparation

  1. If you’re using dried porcini, soak them in lukewarm water for at least 20 minutes to rehydrate them. After soaking, squeeze them out well and cut them into pieces.

  2. Cut the chicken breast into small strips or cubes.

  3. In a large pan, sauté the garlic with a drizzle of extra virgin olive oil. When it is golden, remove it and add the chicken.

  4. Brown the chicken on all sides until well golden. If you have white wine, deglaze the chicken, allowing the alcohol to evaporate.

  5. Add the porcini to the pan with the chicken, cook for a few minutes and stir well.

  6. Pour in the cooking cream, lower the heat, and cook for a few minutes until the sauce becomes creamy. Season with salt and pepper.

  7. Meanwhile, cook the tagliatelle in plenty of salted water following the timings indicated on the package to achieve an al dente texture.

  8. Drain the tagliatelle and add them to the pan with the chicken and porcini sauce, mixing gently to flavor them.

  9. Plate the tagliatelle and garnish each serving with chopped fresh parsley and grated Parmesan cheese.

  10. Serve immediately to enjoy this warm and flavorful dish.
