Tagliatelle with Artichokes and Fasolari

Ingredients
- 320 g of fresh tagliatelle
- 6 fresh artichokes
- 400 g of fasolari (or clams, if unavailable)
- 1 clove of garlic
- Chopped fresh parsley (to taste)
- Extra virgin olive oil
- Salt and pepper to taste
- 1 glass of white wine
- Vegetable broth or water as needed
Preparation
- Clean the fasolari by leaving them in salted water for at least an hour to purge them of sand. Then rinse them under running water.
- Clean the artichokes by removing the tougher outer leaves, the tips, and the stems. Slice them thinly and immerse them in acidulated water with lemon juice to prevent them from blackening.
- In a large pan, sauté a clove of garlic in plenty of extra virgin olive oil until it becomes golden. Remove the garlic and add the drained artichokes. Sauté for a few minutes.
- Add the fasolari to the pan and deglaze with the white wine. Allow the alcohol to evaporate over high heat.
- Once the wine has evaporated, cover the pan and cook on medium-low heat until the fasolari are open. It’s important to discard any that do not open.
- In the meantime, bring a pot of salted water to a boil and cook the tagliatelle until al dente following the timings on the package.
- Drain the pasta keeping some of the cooking water and add it to the pan with the fasolari and artichokes. If necessary, add a bit of vegetable broth or pasta cooking water to make the sauce lighter.
- Toss everything together over high heat to combine the ingredients and add the chopped fresh parsley.
- Serve immediately, topping with a drizzle of raw oil and a grinding of black pepper.
