Tagliatelle Filled with Meat and Ricotta

I can guide you in the preparation of stuffed tagliatelle, which is an unconventional dish because tagliatelle usually isn’t a stuffed pasta format. However, we can think of a variation of the classic tagliatelle by adding a filling as if they were cannelloni, but cut into wide strips like tagliatelle. Here’s how you could proceed:

Ingredients

  • 200 g of flour type 00
  • 2 large eggs
  • 250 g of ricotta
  • 150 g of ground meat (beef or mixed with pork)
  • 50 g of grated Parmesan cheese
  • 1 clove of garlic
  • Chopped parsley to taste
  • Nutmeg to taste
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Tomato sauce (if you wish to serve the tagliatelle with a sauce)
  • Butter (if you prefer a simple dressing)

Preparation

  1. Start by preparing the pasta: make a well with the flour and crack the two eggs in the center. Knead until you get a smooth and elastic dough. Wrap the dough in cling film and let it rest for at least 30 minutes.
  2. For the filling: cook the ground meat in a pan with a drizzle of oil and a clove of garlic, add salt and pepper to taste. Once cooked, let the meat cool down.
  3. In a bowl, mix the ricotta with the Parmesan, chopped parsley, a pinch of nutmeg, salt, and pepper. Add the cooked and cooled ground meat. Mix well to obtain a homogeneous mixture.
  4. Roll out the pasta dough into a thin sheet, distribute the filling over the sheet, and roll it up on itself. Cut the roll into wide strips like tagliatelle, taking care not to let the filling come out.
  5. Cook the stuffed tagliatelle in plenty of boiling salted water for a few minutes, until they float to the surface.
  6. Meanwhile, prepare a simple tomato sauce or melt some butter in a pan.
  7. Drain the stuffed tagliatelle and dress them with the tomato sauce or melted butter. Sprinkle with additional Parmesan before serving.

Note that this is a rather unique creation that blends two different preparations: stuffed pasta and tagliatelle. It may seem unconventional, but it’s certainly a nice way to experiment in the kitchen!

Curiosity

Tagliatelle is a type of pasta typically Italian, originating from the Emilia-Romagna region. They are known for their ribbon shape and are traditionally served with a meat sauce, better known as Bolognese sauce.
