Swordfish with Almonds

Swordfish with almonds is a delicious, light and tasty second course that combines the savoriness of the fish with the crunchiness of the almonds. Here is the recipe:

Ingredients

  • 4 swordfish steaks (about 200 g each)
  • 100 g of slivered almonds
  • Flour, as needed
  • Extra virgin olive oil
  • Salt and pepper, to taste
  • Juice of 1 lemon
  • Chopped parsley, to taste
  • 1 clove of garlic (optional)
  • A dash of white wine (optional)

Preparation

  1. Pat the swordfish steaks dry with paper towels and, if you wish, lightly dredge them in flour.
  2. Heat a splash of extra virgin olive oil in a large pan (if desired, you can add a garlic clove to flavor the oil, then remove it later).
  3. Place the swordfish steaks in the pan and brown them on both sides, adjusting for salt and pepper.
  4. Once the fish is golden, add the slivered almonds, letting them toast and adhere well to the fish, flipping the steaks once if necessary.
  5. If you like, you can deglaze the fish with a dash of white wine and let the alcohol evaporate.
  6. Finish cooking until the almonds are well-toasted and crispy.
  7. Drizzle everything with lemon juice and sprinkle with chopped parsley before serving.

Serve the swordfish with almonds hot, perhaps accompanied by a fresh salad or steamed vegetables.

Curiosity

Swordfish is highly regarded in Mediterranean cuisine, not only for its delicate flavor but also for the texture of its flesh, which lends itself to various preparations. Almonds are often used in Sicilian cuisine, where the mix of sweet and savory flavors is quite typical, reminding us of the passage of different cultures that have influenced the island.
