Swordfish Rolls

Ingredients
- 8 slices of swordfish (about 5 mm thick)
- 80 g of breadcrumbs
- 40 g of raisins
- 40 g of pine nuts
- 1 bunch of chopped parsley
- 4 anchovy fillets in oil
- 2 cloves of garlic
- Oregano to taste
- Salt and pepper to taste
- Extra virgin olive oil to taste
- Lemon slices, to garnish
Preparation
- To start, soak the raisins in warm water for about 10-15 minutes to hydrate them.
- In a bowl, mix the breadcrumbs with chopped parsley, squeezed raisins, pine nuts, chopped anchovies, a pinch of oregano, and a grind of pepper. Mix the filling well with some oil until you obtain a homogeneous mixture.
- Lay out the swordfish slices and gently beat them to make them thinner. Lightly salt each slice.
- Spread some of the prepared filling on each slice of swordfish, being careful not to overdo it to prevent it from coming out during cooking.
- Roll up the swordfish slices on themselves to form rolls. Secure the rolls with a toothpick to maintain their shape during cooking.
- Heat a drizzle of oil in a non-stick pan with the garlic cloves and place the swordfish rolls in it.
- Cook the rolls over medium heat, turning them gently to brown them evenly on all sides.
- Once cooked, remove the toothpick, plate the rolls, and serve garnished with lemon slices.
