Swordfish Rolls

Ingredients

  • 8 slices of swordfish (about 5 mm thick)
  • 80 g of breadcrumbs
  • 40 g of raisins
  • 40 g of pine nuts
  • 1 bunch of chopped parsley
  • 4 anchovy fillets in oil
  • 2 cloves of garlic
  • Oregano to taste
  • Salt and pepper to taste
  • Extra virgin olive oil to taste
  • Lemon slices, to garnish

Preparation

  1. To start, soak the raisins in warm water for about 10-15 minutes to hydrate them.
  2. In a bowl, mix the breadcrumbs with chopped parsley, squeezed raisins, pine nuts, chopped anchovies, a pinch of oregano, and a grind of pepper. Mix the filling well with some oil until you obtain a homogeneous mixture.
  3. Lay out the swordfish slices and gently beat them to make them thinner. Lightly salt each slice.
  4. Spread some of the prepared filling on each slice of swordfish, being careful not to overdo it to prevent it from coming out during cooking.
  5. Roll up the swordfish slices on themselves to form rolls. Secure the rolls with a toothpick to maintain their shape during cooking.
  6. Heat a drizzle of oil in a non-stick pan with the garlic cloves and place the swordfish rolls in it.
  7. Cook the rolls over medium heat, turning them gently to brown them evenly on all sides.
  8. Once cooked, remove the toothpick, plate the rolls, and serve garnished with lemon slices.
