Linguine with Swordfish
17/11/2023Swordfish linguine is a delicious and relatively simple dish to prepare. Here is the recipe to make this dish in Italian style:
Ingredients
- 320 g of linguine
- 200 g of swordfish
- 10 cherry tomatoes
- 2 tablespoons of extra virgin olive oil
- 1 clove of garlic
- Fresh parsley to taste
- Salt and pepper to taste
- 1/2 glass of white wine
- Grated zest of 1 lemon (optional, to add a touch of freshness)
Preparation
- Start by cutting the swordfish into medium-sized cubes and set them aside.
- Wash the cherry tomatoes and cut them in half.
- Fry the finely chopped garlic in a pan with the extra virgin olive oil. When the garlic turns golden, remove it from the pan if you prefer a milder flavor.
- Add the swordfish cubes to the pan and brown them over medium-high heat for a couple of minutes.
- Deglaze with the white wine and let the alcohol evaporate.
- Lower the heat, add the cherry tomatoes, salt, and pepper, and cook for about 5 minutes, until the sauce starts to reduce.
- Meanwhile, cook the linguine in a large pot of salted water following the cooking times indicated on the package for al dente pasta.
- Drain the pasta, saving some of the cooking water, and transfer it to the pan with the swordfish and cherry tomato sauce.
- Toss the linguine in the pan, adding some cooking water if necessary to combine the sauce with the pasta well.
- Turn off the heat, add the chopped fresh parsley, and if you like, the grated lemon zest for a fresher and more aromatic flavor.
Plate and serve immediately, perhaps accompanying the dish with a glass of fresh white wine that enhances its flavors.
