Ingredients
- 250 g of type 00 flour
- 100 g of sugar
- 100 g of cold butter, cut into cubes
- 1 egg
- 1 egg yolk
- The grated zest of 1 lemon
- A pinch of salt
- Jam of your choice (about 200 g)
Preparation
- In a large bowl, put the sifted flour, sugar, butter, salt, and lemon zest. Work the ingredients with your fingertips until you have a mixture resembling sand.
- Add the egg and egg yolk, then quickly knead until you have a homogeneous dough. If the dough is too dry, you can add a small spoonful of cold water.
- Wrap the dough in cling film and let it rest in the fridge for at least 30 minutes.
- Preheat the oven to 180 °C.
- Roll out the dough on a lightly floured surface, aiming for a thickness of about 3 mm.
- With a suitable pastry cutter or a knife, cut out squares of about 8 cm on each side.
- Place a teaspoon of jam in the center of each square, being careful not to overdo it to prevent it from leaking during baking.
- Fold the squares over themselves to form triangles and seal the edges by pressing them with a fork.
- Lay the triangles on a baking tray lined with parchment paper and lightly brush them with a beaten egg yolk or milk for shine.
- Bake for about 15-20 minutes, until the triangles are golden.
- Remove from the oven and let cool on a rack before serving.
