Sweet Yogurt, Ricotta and Lemon Terrine
17/11/2023The sweet yogurt, ricotta, and lemon terrine is a fresh and delicate dessert, perfect to conclude a meal or to enjoy as a snack. Here is the recipe:
Ingredients
- 250 g of Greek yogurt
- 250 g of ricotta
- 80 g of powdered sugar
- Grated zest of 2 lemons
- Juice of 1 lemon
- 12 g of sheet gelatin (fish glue)
- 50 ml of water
- Fresh fruit for decoration (for example, strawberries, raspberries, or kiwi)
- Honey or maple syrup for garnishing (optional)
Preparation
- Soak the gelatin sheets in cold water for about 10 minutes.
- In the meantime, in a bowl, combine the Greek yogurt and ricotta, mixing well with a spatula or a spoon to obtain a smooth and homogeneous mixture.
- Add the powdered sugar and grated lemon zest to the yogurt and ricotta mixture, then mix until the sugar is completely absorbed.
- Heat the lemon juice without bringing it to a boil and dissolve the well-squeezed gelatin in it. Add this liquid mixture to the cream of yogurt and ricotta and mix well until all the ingredients are well combined.
- Pour the mixture into a mold lined with plastic wrap (or a springform pan lined with parchment paper) and level it with a spatella.
- Put the terrine in the refrigerator for at least 4 hours, or until it has firmed up.
- At the time of serving, turn the terrine out onto a serving plate, remove the mold and the film, and decorate with fresh fruit of your choice. If you wish, you can drizzle with honey or maple syrup.
This terrine is a simple and elegant way to end a meal, and its citrus touch makes it particularly suitable for the warm periods. Moreover, you can vary the type of fruit used for the decoration based on seasonality or your personal preferences.
