Sweet Semolina

Ingredients
- 1 liter of milk
- 250 grams of semolina
- 100 grams of sugar
- Grated zest of 1 (untreated) lemon
- 1 pinch of salt
- 50 grams of butter
- 2 egg yolks
- Ground cinnamon (optional)
- Powdered sugar (optional)
Preparation
- Pour the milk into a large pot, add the grated lemon zest and a pinch of salt, and slowly bring to a boil.
- When the milk begins to boil, lower the heat and slowly pour in the semolina, stirring continuously with a whisk to prevent lumps from forming.
- Continue to cook over low heat, stirring occasionally until the semolina has thickened and absorbed almost all the milk. This usually takes about 10-15 minutes.
- Remove the pot from the heat and incorporate the sugar and butter, stirring until they have completely melted.
- In a bowl, lightly beat the egg yolks, then add them to the hot semolina, stirring quickly to combine them without allowing them to curdle.
- Pour the semolina into a serving dish or into a mold moistened with a little water and let it cool. You can also use individual molds if you prefer single servings.
- Once cooled, you can turn the semolina out onto a serving plate. If desired, decorate with a bit of ground cinnamon and dust with powdered sugar before serving.

In Italian peasant tradition, sweet semolina was often prepared during the winter months to take advantage of the warming and filling properties of semolina. In some regions, raisins or pine nuts are also added to the base recipe, enriching it with additional flavors and textures.
