Sweet Ravioli with Ricotta and Chocolate Chips
17/11/2023Sweet ravioli with ricotta and chocolate chips are a delicious dessert, ideal for beautifully concluding a meal or for a sweet afternoon snack.
Ingredients
- 250 g of flour
- 2 eggs
- 250 g of drained sheep or cow ricotta
- 70 g of sugar
- 1 pinch of salt
- 100 g of chocolate chips
- Powdered sugar (for dusting)
- Grated zest of a lemon or an orange (optional)
Preparation
- Prepare the pasta for the ravioli by sifting the flour onto a pastry board and forming the classic “fountain” with a hole in the center where you will add the eggs and a pinch of salt.
- Start to mix the ingredients with a fork, incorporating the flour little by little, then knead with your hands until you obtain a smooth and homogeneous dough. Let the dough rest, wrapped in cling film, for about 30 minutes.
- In the meantime, prepare the filling by mixing ricotta with sugar, chocolate chips, and, if you wish, the grated zest of lemon or orange for a touch of freshness in a bowl.
- After the dough has rested, roll it out with the help of a pasta machine or a rolling pin, getting a thin but not too thin sheet to avoid breaking during cooking.
- Arrange small amounts of filling on the pasta sheet at regular intervals. Cover with another layer of pasta and press around the filling to seal, being sure to eliminate any air.
- Use a pastry cutter or a wheeled pasta cutter to cut out the ravioli and place them on a floured tray or a clean tea towel, taking care to not overlap them.
- Bring a pot of water to a boil, lightly salt it, and cook the ravioli for about 2-3 minutes, or until they float to the surface.
- Carefully drain the ravioli and serve them warm, dusted with powdered sugar to taste.
