Sweet Potato Pancakes

Sweet potato pancakes are a delicious variation of the more traditional pancakes. Here is the recipe with an Italian twist.

Ingredients

  • 250 g of sweet potatoes
  • 100 g of flour
  • 1 egg
  • 80 ml of milk
  • 1 teaspoon of baking powder
  • 1 pinch of salt
  • 1 pinch of nutmeg (optional)
  • Extra virgin olive oil or butter for cooking

Preparation

  1. Start by peeling the sweet potatoes, cut them into pieces and steam or boil until tender.
  2. Mash the cooked sweet potatoes in a bowl until you get a puree.
  3. Add the egg to the sweet potato puree and mix well.
  4. Incorporate the milk to get a smooth mixture.
  5. In another bowl, mix the flour with the baking powder, salt, and nutmeg, then add these dry ingredients to the potato mixture.
  6. Mix well until you get a smooth and lump-free batter (if necessary add a bit more milk to achieve the desired consistency).
  7. Heat a pan over medium heat with a drizzle of olive oil or a knob of butter.
  8. Pour a ladle of batter into the hot pan and cook until bubbles appear on the surface, then flip the pancake and cook the other side until golden brown.
  9. Repeat with all the batter.
  10. Serve the pancakes hot with your preferred topping.

In Anglo-Saxon countries, sweet potato pancakes are often accompanied by maple syrup or honey, but with an Italian twist, you might try serving them with a sprinkle of powdered sugar and a pinch of cinnamon, or with fresh ricotta or yogurt for a lighter, Mediterranean touch.
