Sweet Crepe Cake

The sweet crepe cake is an elegant and delicious dessert that comes in layers, each of which is a crepe filled with cream. Here’s how to prepare it.

Ingredients

For the crepes:

  • 250 g of flour
  • 500 ml of milk
  • 4 eggs
  • 2 tablespoons of sugar
  • A pinch of salt
  • Butter for the pan

For the cream:

  • 500 ml of whipping cream
  • 2 tablespoons of powdered sugar
  • 1 teaspoon of vanilla extract

Optional:

  • Cocoa powder, jam, Nutella, or fresh fruit for the filling

Preparation

  1. In a large bowl, mix the flour, eggs, sugar, and salt. Start incorporating the milk, stirring constantly to avoid lumps, until you get a smooth batter. Let the crepe batter rest for about 30 minutes in the refrigerator.
  2. Heat a non-stick pan over medium heat and lightly grease with some butter. Pour a ladle of batter into the pan, tilting it to spread the liquid evenly and form a thin crepe.
  3. Cook the crepe until the edges begin to detach from the pan and the bottom turns golden. Flip it and cook on the other side for a few more seconds. Repeat until all the batter is used up, stacking the crepes on a plate.
  4. For the cream, whip the cream with the powdered sugar and vanilla until you get a fluffy and firm consistency.
  5. To assemble the cake, place a crepe on the serving plate and spread a thin layer of cream (or chosen alternative). Continue alternating layers of crepes and cream until all the ingredients are used.
  6. To finish, you can dust the top with cocoa powder, or decorate with fresh fruit.

Remember to leave the cake in the fridge for at least a couple of hours before serving; this will allow the layers to settle well.

Curiosity

The crepe cake is not traditionally Italian, but to give it a local touch, you could add some sweetened ricotta or limoncello to the layers to flavor the cream. It is a dessert that lends itself to many variations, so feel free to experiment with the ingredients you prefer!
