Sweet Crepe Cake
17/11/2023The sweet crepe cake is an elegant and delicious dessert that comes in layers, each of which is a crepe filled with cream. Here’s how to prepare it.
Ingredients
For the crepes:
- 250 g of flour
- 500 ml of milk
- 4 eggs
- 2 tablespoons of sugar
- A pinch of salt
- Butter for the pan
For the cream:
- 500 ml of whipping cream
- 2 tablespoons of powdered sugar
- 1 teaspoon of vanilla extract
Optional:
- Cocoa powder, jam, Nutella, or fresh fruit for the filling
Preparation
- In a large bowl, mix the flour, eggs, sugar, and salt. Start incorporating the milk, stirring constantly to avoid lumps, until you get a smooth batter. Let the crepe batter rest for about 30 minutes in the refrigerator.
- Heat a non-stick pan over medium heat and lightly grease with some butter. Pour a ladle of batter into the pan, tilting it to spread the liquid evenly and form a thin crepe.
- Cook the crepe until the edges begin to detach from the pan and the bottom turns golden. Flip it and cook on the other side for a few more seconds. Repeat until all the batter is used up, stacking the crepes on a plate.
- For the cream, whip the cream with the powdered sugar and vanilla until you get a fluffy and firm consistency.
- To assemble the cake, place a crepe on the serving plate and spread a thin layer of cream (or chosen alternative). Continue alternating layers of crepes and cream until all the ingredients are used.
- To finish, you can dust the top with cocoa powder, or decorate with fresh fruit.
Remember to leave the cake in the fridge for at least a couple of hours before serving; this will allow the layers to settle well.
Curiosity
The crepe cake is not traditionally Italian, but to give it a local touch, you could add some sweetened ricotta or limoncello to the layers to flavor the cream. It is a dessert that lends itself to many variations, so feel free to experiment with the ingredients you prefer!
