Sweet Coconut Milk Buns

Ingredients
- 500g of type 00 flour
- 250ml of warm coconut milk
- 70g of granulated sugar
- 1 egg
- 100g of soft butter
- 7g of dry yeast or 25g of fresh yeast
- 1 pinch of salt
- Coconut flakes for decorating
- Icing sugar for decorating
Preparation
- In a large bowl, dissolve the yeast in the warm coconut milk and add a tablespoon of sugar taken from the total amount. Let it rest for about 10 minutes until the yeast begins to foam.
- To the mixture of coconut milk and yeast, add the flour, the remaining sugar, the egg, and the pinch of salt. Start kneading the ingredients until they form a smooth dough.
- Add the soft butter in pieces, continuing to knead until the dough becomes smooth and elastic.
- Form a ball, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours or until doubled in volume.
- After rising, divide the dough into portions of about 70-80 grams each and shape into round buns.
- Place the buns on a baking tray lined with parchment paper, cover with a cloth, and let rise again for 30-40 minutes.
- Bake the buns in a pre-heated oven at 180 °C for 15-20 minutes or until they are golden brown.
- At the end of cooking, sprinkle the buns with coconut flakes and icing sugar for a sweet and decorative touch.
To give an Italian touch to your sweet coconut milk buns, you could add some limoncello liquor to the dough, which goes very well with the sweetness of the coconut, or perhaps enrich them with a pastry cream flavored with lemon zest for a soft and fragrant heart.
