La Befana's Sweet Coal
17/11/2023La Befana’s Sweet Coal is a traditional Italian sweet, specifically thought for the Epiphany, which is celebrated on January 6th. Here is how to prepare it:
Ingredients
- 400 g of granulated sugar
- 100 ml of water
- 1 teaspoon of lemon juice
- Black food coloring in gel or powder form (amount as needed)
- 1 teaspoon of baking soda
Preparation

In a small pot, mix granulated sugar with water and lemon juice. Place the pot on the stove and let the sugar dissolve completely, without stirring too much to prevent crystallization.

Once the sugar is dissolved, add the black food coloring. The amount will depend on the intensity of the color you want to achieve. Mix well to evenly distribute the color.

Cook the syrup until it reaches 145-150 °C, then remove the pot from the heat. If you don’t have a kitchen thermometer, you can check the temperature by dropping a drop of syrup into a glass of cold water; if it solidifies immediately forming a hard thread, it’s ready.

Quickly add the baking soda and stir vigorously for a few seconds. You will see that the mixture will start to foam and increase in volume.

Pour the mixture immediately onto a sheet of parchment paper and let it cool completely without touching it.

Once solidified, break the “coal” into irregular pieces with your hands or the help of a tool.

Store the sweet coal in cellophane bags or in a tin box to maintain freshness.
Curiosity
This treat mimics the appearance of coal, as a “prize” for children who have not been particularly good during the year, in contrast to sweets and gifts for those who have behaved well. Despite the meaning, it is now a delicacy enjoyed by all during the holidays!
If you desire an extra touch, some variants include a small amount of anise or liquor to the mixture, to give a richer flavor.
