Ingredients

  • 500 g of carrots
  • 2 tablespoons of sugar
  • 4 tablespoons of white wine vinegar
  • 2 tablespoons of extra virgin olive oil
  • Salt to taste
  • Pepper to taste (optional)
  • Chopped parsley for garnish (optional)

Preparation

  1. Clean the carrots, peel them and cut them into slices or sticks, depending on your preference.
  2. In a large skillet, heat the extra virgin olive oil and add the carrots; let them sauté slightly.
  3. Sprinkle the carrots with sugar and let it caramelize slightly.
  4. Deglaze with white wine vinegar and let it evaporate.
  5. Lower the heat, cover the pan and let the carrots cook until they are tender but still crunchy.
  6. If necessary, add a little water during cooking to prevent the carrots from sticking to the bottom of the pan.
  7. Taste and adjust the seasoning with salt, adding a pinch of pepper if you like.
  8. Once ready, sprinkle with chopped parsley if desired.
