Sweet and Savory Crepes

Sweet Crepes (Basic Recipe)
Ingredients
- 130 grams of all-purpose flour
- 250 ml of milk
- 2 eggs
- 30 grams of melted butter
- 2 tablespoons of sugar (for the sweet version)
- A pinch of salt
- 1 teaspoon of vanilla extract or grated zest of one lemon (optional, for flavoring)
Preparation
- Sift the flour into a bowl.
- In a second bowl, beat the eggs, then add the milk, sugar, melted butter, salt, and if desired, vanilla extract or lemon zest.
- Combine the liquid mix with the dry ingredients, whisking to avoid lumps.
- Let the batter rest for about 30 minutes in the refrigerator.
- Heat a non-stick pan slightly greased with some butter or oil.
- Pour a ladle of batter into the pan, tilting it to spread the batter evenly.
- Cook the crepe until it browns on the bottom, then flip and cook the other side.
- Continue until all the batter is used up.
Savory Crepes (Basic Recipe)

- Herbs such as chives or parsley, chopped (optional)
Preparation
- Sift the flour into a bowl.
- In a second bowl, beat the eggs, then add the milk, melted butter, and salt. If desired, also add the chopped herbs.
- Combine the liquids with the dry ingredients, whisking to avoid lumps.
- Let the batter rest for about 30 minutes in the refrigerator.
- Heat a non-stick pan slightly greased with some butter or oil.
- Pour a ladle of batter into the pan, tilting it to spread the batter evenly.
- Cook until golden on one side, then flip it and cook the other side.
- Continue until the batter is finished.
For an Italian touch to your sweet crepes, you can add Nutella or sweetened ricotta with candied orange peel as a filling. For the savory ones, a filling of cooked ham and fontina or mozzarella cheese is simple yet delicious. Crepes can be served with various fillings, sweet or savory, according to your preference.
