Sweet Abruzzese Scrippellette

Scrippelle ‘mbusse are a typical Abruzzese preparation, often served as an appetizer or a first course. There are also sweet variations called “scrippellette”, more similar to sweet crêpes and can be served as dessert. Here’s the recipe for sweet Abruzzese scrippellette:

Ingredients

  • 3 eggs
  • 150 g of all-purpose flour
  • 300 ml of milk
  • 2 tablespoons of sugar
  • A pinch of salt
  • Grated zest of lemon or orange (to taste)
  • Butter for greasing the pan
  • Icing sugar for decorating (optional)
  • Jam or Nutella for filling (optional)

Preparation

  1. In a bowl, beat the eggs with the sugar and a pinch of salt until frothy.
  2. Gradually add the sifted flour, alternating with the milk, to prevent lumps, until you get a smooth and homogeneous batter.
  3. Add the grated zest of lemon or orange to give a delicate aroma to the batter.
  4. Let the batter rest for about 30 minutes at room temperature.
  5. Heat a non-stick pan and lightly grease it with a bit of butter.
  6. Pour a ladle of batter into the hot pan and tilt it to spread the mixture evenly, trying to get a thin scrippella.
  7. Cook each scrippella for about a minute on each side or until golden.
  8. Move the cooked scrippella onto a plate and continue with the rest of the batter.
  9. You can serve the scrippellette plain or rolled up with jam or Nutella inside.

The sweet scrippellette can be garnished with icing sugar sprinkled on top for a sweet and refined final touch.
