Sweet Abruzzese Scrippellette
17/11/2023Scrippelle ‘mbusse are a typical Abruzzese preparation, often served as an appetizer or a first course. There are also sweet variations called “scrippellette”, more similar to sweet crêpes and can be served as dessert. Here’s the recipe for sweet Abruzzese scrippellette:
Ingredients
- 3 eggs
- 150 g of all-purpose flour
- 300 ml of milk
- 2 tablespoons of sugar
- A pinch of salt
- Grated zest of lemon or orange (to taste)
- Butter for greasing the pan
- Icing sugar for decorating (optional)
- Jam or Nutella for filling (optional)
Preparation
- In a bowl, beat the eggs with the sugar and a pinch of salt until frothy.
- Gradually add the sifted flour, alternating with the milk, to prevent lumps, until you get a smooth and homogeneous batter.
- Add the grated zest of lemon or orange to give a delicate aroma to the batter.
- Let the batter rest for about 30 minutes at room temperature.
- Heat a non-stick pan and lightly grease it with a bit of butter.
- Pour a ladle of batter into the hot pan and tilt it to spread the mixture evenly, trying to get a thin scrippella.
- Cook each scrippella for about a minute on each side or until golden.
- Move the cooked scrippella onto a plate and continue with the rest of the batter.
- You can serve the scrippellette plain or rolled up with jam or Nutella inside.
The sweet scrippellette can be garnished with icing sugar sprinkled on top for a sweet and refined final touch.
