Summer Zucchini Pizzettes

Summer zucchini pizzettes are a lighter and summery alternative to classic pizzettes. Here’s the recipe for delicious zucchini pizzettes.

Ingredients

  • 2 large zucchinis
  • 200 grams of mozzarella (or another cheese that melts well)
  • 100 grams of cherry tomatoes
  • Dry oregano to taste
  • Extra virgin olive oil to taste
  • Salt and pepper to taste
  • Fresh basil (optional)
  • (Optional ingredients for additional flavor, such as olives, anchovies, capers, bell peppers, etc.)

Preparation

  1. Wash the zucchinis and cut them into round slices about 1 cm thick.
  2. Place the zucchini slices on a baking tray lined with parchment paper and season with a drizzle of extra virgin olive oil, salt, and pepper.
  3. Bake the zucchinis in a preheated oven at 200 °C (392 °F) for about 10-15 minutes, until they turn slightly golden.
  4. In the meantime, cut the cherry tomatoes in half and the mozzarella into cubes or thin slices.
  5. Once the zucchinis are cooked, take them out of the oven and assemble your pizzettes: place some mozzarella on each slice and a few tomato halves.
  6. Sprinkle with a pinch of dry oregano and, if you like, add some other ingredients of your choice.
  7. Put the pizzettes back in the oven for another 5 minutes or until the mozzarella has melted well.
  8. Take the zucchini pizzettes out of the oven and, if you like, garnish with fresh basil leaves before serving.

Zucchini pizzettes are excellent finger food for appetizers or summer aperitifs and can be personalized in many ways by adding your favorite ingredients.
