Sugar-Free Chocolate Salami
17/11/2023Chocolate salami is a typical Italian cold dessert, which can also be prepared in a sugar-free version, ideal for those who need to limit sucrose intake. Here’s a sugar-free version, remember that some of its ingredients naturally contain sugars.
Ingredients
- 200 g of sugar-free dry biscuits
- 100 g of lactose-free butter, if necessary for dietary restrictions
- 100 g of unsweetened cocoa powder
- 100 g of chopped nuts (walnuts, almonds, hazelnuts, etc.)
- 100 g of sugar-free condensed milk
- A pinch of salt
- Natural vanilla flavor or vanilla bean
- Liquor, such as rum or marsala, optional and to taste
Preparation
- Roughly chop the biscuits and the nuts (almonds, walnuts, hazelnuts, etc.) and put them into a large bowl.
- Melt the butter in a saucepan over low heat, or in the microwave, and let it cool.
- Add the cocoa powder to the melted butter and mix well until a smooth cream is obtained.
- Pour the cocoa and butter cream onto the chopped biscuits and nuts, add the sugar-free condensed milk, a pinch of salt, the vanilla flavoring, and, if you like, a bit of liquor.
- Mix all the ingredients until you get a well-blended mixture.
- On parchment paper or clear film, pour the mixture and shape it into the typical cylindrical form of the salami, wrapping it well and tightening the ends like a candy.
- Leave the chocolate salami in the refrigerator for at least 3-4 hours, ideally overnight, so that it hardens and sets.
- Before serving, you may dust the salami with cocoa powder or sugar-free icing sugar to create the “salami” effect.
Interesting Facts
Chocolate salami doesn’t contain actual salami; the name comes from its resemblance, once finished, to a traditional salami due to its cylindrical shape and the bits of biscuit and nuts that resemble the fat and meat of salami.
Remember that the sweetener content in the sugar-free condensed milk can vary depending on the brand, so make sure to taste and, if needed, adjust the sweetness of your chocolate salami to your liking.
