Stuffed Zucchini Pinwheels
17/11/2023The stuffed zucchini pinwheels are a very tasty and easy to prepare summer appetizer. Here is the recipe to make them:
Ingredients
- 3 large zucchinis
- 200g of ricotta cheese
- 50g of grated Parmesan cheese
- Slices of cooked ham (quantity to taste)
- Chopped chives (to taste)
- Salt and pepper (as needed)
- Extra virgin olive oil (for grilling the zucchinis)
Preparation

Wash and dry the zucchinis, then cut them into longitudinal slices, about 3-4 mm thick, using a mandolin or a sharp knife.

Heat a grill pan or a non-stick skillet and lightly brush the zucchini slices with extra virgin olive oil. Grill the slices on both sides until they are soft and have the classic grill marks. Set them aside on a plate and let them cool down.

In a bowl, mix the ricotta with the grated Parmesan cheese, add the chopped chives, salt and pepper to taste. Mix well until you obtain a homogeneous mixture.

Take a slice of grilled zucchini, spread a layer of the ricotta and Parmesan cream, then add a slice of cooked ham on top.

Gently roll the zucchini from the shorter side to form a pinwheel, and secure it with a toothpick to hold the shape.

Repeat the process for all the zucchini slices. You can serve the pinwheels immediately or leave them in the fridge for a few hours before serving.
