Stuffed Turkey Rolls

Ingredients

  • 4 slices of turkey breast (thin)
  • 4 slices of raw ham
  • 100 g of scamorza (or sweet provola)
  • Sage (a few leaves)
  • Salt and pepper to taste
  • Extra virgin olive oil
  • White wine for deglazing
  • Kitchen twine or toothpicks

Preparation

  1. Lay the turkey breast slices on a work surface and flatten them slightly with a meat mallet if necessary.
  2. Season each slice with salt and pepper and place a slice of raw ham on each one. If you prefer something more delicate, you can replace the raw ham with cooked ham.
  3. Cut the scamorza into sticks and place one on each slice of turkey.
  4. Add one or two sage leaves to each slice.
  5. Roll up the rolls and close them with kitchen twine or toothpicks.
  6. In a large skillet, heat a drizzle of extra virgin olive oil and brown the rolls on all sides until well golden.
  7. Deglaze with a bit of white wine, let it evaporate, and continue cooking covered with a lid for about 10-15 minutes, adjusting the time according to the thickness of the rolls.
  8. If the rolls dry out too much during cooking, add a little water or broth to keep the cooking base moist.
