Oven-Baked Stuffed Turkey Rollè
17/11/2023The oven-baked stuffed turkey roulades are a delicious dish that’s quite simple to prepare. Here’s the recipe to create this tasty main course.
Ingredients
- 4 slices of turkey breast (4 slices of about 150 g each)
- 100 g of thinly sliced cooked ham
- 100 g of stringy cheese (such as mozzarella or scamorza)
- Fresh sage (a few leaves)
- Salt and pepper to taste
- Extra virgin olive oil
- Chicken or vegetable broth (as needed)
- White wine (a splash for deglazing)
- Kitchen twine to tie the roulades
Preparation
- Take the turkey breast slices and, if necessary, gently pound them with a meat tenderizer to achieve a uniform thickness and to spread them out a bit.
- Season the turkey slices on both sides with salt and pepper.
- On each slice of turkey, place a slice of cooked ham and on top of the ham add the cheese cut into slices or strips. Place two or three sage leaves on the cheese.
- Carefully roll up the turkey slices to form roulades and tie each rollè with kitchen twine to keep its shape during cooking.
- In a large frying pan, heat a drizzle of extra virgin olive oil and brown the roulades on all sides until they are golden.
- Deglaze with a bit of white wine and let the alcohol evaporate.
- Add broth until it covers about one-third of the roulades and let them cook over moderate heat for about 20 minutes, turning occasionally and adding broth if necessary.
- Once cooked, turn off the heat and let them rest for a few minutes before removing the twine.
Serve them hot, possibly accompanied by a side of seasonal vegetables.
Curiosity
Turkey is a white meat highly valued for its nutritional properties, being rich in protein and low in fats. This dish becomes more substantial and tasty thanks to the stuffing, combining the tenderness of the meat with the bold flavor of melting cheese and ham. In Italy, it’s common to prepare roulades with various fillings, for example using spinach or even radicchio to give a slightly bitter note.
