Stuffed Tortillas

- Roll out the tortillas: Using a tortilla press or rolling pin, roll out each ball between two sheets of baking paper until you get a thin disc.
- Cook the tortillas: Heat a non-stick pan over medium-high heat and cook each tortilla for about 30-60 seconds per side or until small bubbles start to appear and the edges peel off easily.
Ingredients for the Italian filling:
- 1 chicken breast cut into strips
- 1 red bell pepper, cut into strips
- 1 zucchini, cut into half-moons
- 1 small onion, thinly sliced
- Extra virgin olive oil
- Salt and pepper to taste
- Grated or diced mozzarella
- Homemade tomato sauce or tomato passata
- Dried oregano
Preparation
- In a pan, sauté the onion in extra virgin olive oil until it becomes translucent.
- Add the chicken and brown it until it’s no longer pink inside.
- Incorporate peppers and zucchini and cook until softened yet still crunchy.
- Taste and adjust for salt and pepper.
- Add the tomato sauce and oregano, and cook for another 5 minutes so the flavors come together.
- Stuff the tortillas with the mixture and add the mozzarella.
- Close the tortillas and return them to the pan until the cheese is melted.
Serve hot, perhaps accompanied by a sauce like guacamole or a spicy sauce, for those who love intense flavors.
