Stuffed Rosettes

Here is the recipe for the classic Stuffed Rosettes, a tasty Italian bread usually filled with cold cuts and cheese. You will see that their preparation requires some time and patience, but the result will be absolutely delicious.

Ingredients

  • 500 g of strong flour (suitable for bread and pizza)
  • 12 g of fresh brewer’s yeast (or 4 g of dry brewer’s yeast)
  • 300 ml of lukewarm water
  • 1 teaspoon of sugar
  • 10 g of fine salt
  • 30 g of lard or soft butter (optional)
  • Mixed cold cuts (raw or cooked ham, salami, mortadella, etc.)
  • Cheeses of your choice (provolone, fontina, emmental, well-drained mozzarella, etc.)

Preparation

  1. Dissolve the brewer’s yeast in the lukewarm water with a teaspoon of sugar.
  2. In a large bowl, add the flour and salt. Mix the dry ingredients well.
  3. Gradually add the water and yeast mixture to the flour and start kneading the dough. If you are using lard or butter, add it at this point.
  4. Knead until you get a smooth and elastic dough. You may need to adjust with a little water or flour, depending on absorption.
  5. Form a ball with the dough, place it in an oiled bowl, cover with a damp cloth and let it rise in a warm place for 2 hours, or until it doubles in size.
  6. After the rising time, take the dough, gently deflate it and divide it into pieces of about 100 g each.
  7. Roll out each piece into a thin disc, leaving a thicker edge on the sides.
  8. Fill the discs with your favorite cold cuts and cheeses, but don’t overdo it to prevent them from leaking out during cooking.
  9. Fold the edges towards the center, sealing the discs well and shape them into a rosette.
  10. Place the rosettes on a baking sheet lined with parchment paper, cover with a cloth and let them rise again for 30 minutes.
  11. Preheat the oven to 200 °C.
  12. Bake the rosettes for about 20 minutes or until they are golden and crispy.
  13. Remove from the oven and let cool on a rack.

Serve the stuffed rosettes warm or at room temperature. They are perfect for a picnic, a buffet, or as a substitute for the classic stuffed sandwich.
