Stuffed rice roll

Ingredients
- 200 g of sushi or risotto rice
- 2 zucchinis
- 1 carrot

Preparation
- Cook the rice following the instructions on the package until it is cooked but still al dente. Drain it and let it cool down.
- In the meantime, cut the zucchinis, carrot, and bell pepper into thin strips and sauté them in a pan with a drizzle of olive oil, salt, and pepper until they are slightly softened but still crunchy.
- Lay out a sheet of cling film on the counter and spread the rice on top, creating an even layer about 1 cm thick, leaving an edge free on each side.
- Place a horizontal row of cooked ham, sliced mozzarella, and sautéed vegetables on one half of the rice, towards the edge closest to you.
- Add basil leaves on top of the filling for a touch of freshness.
- Using the cling film as a guide, roll the rice around the filling, sealing the edges well and forming a tight roll.
- Wrap the roll in the cling film and let it rest in the refrigerator for about 30 minutes.
- Remove the cling film and cut the roll into pieces about 2 cm thick with a sharp knife.
- Serve your Italian-style rice rolls as an appetizer or a main dish.
