Stuffed potato meatloaf

The stuffed potato meatloaf is a hearty and tasty second course that can also be served as a one-dish meal. Here is the recipe for you:

Ingredients

  • 1 kg of potatoes
  • 2 egg yolks
  • 100 g of grated Parmesan cheese
  • Salt and pepper to taste
  • Nutmeg to taste
  • 100 g of diced cooked ham
  • 100 g of mozzarella or other melting cheeses, diced
  • 50 g of breadcrumbs
  • Butter to taste

Preparation

  1. Start by washing the potatoes and boiling them in salted water until they become soft.
  2. Once cooked, drain them, peel them and mash them with a potato masher to obtain a puree.
  3. Add to the potato puree the egg yolks, Parmesan, a pinch of salt, pepper, and nutmeg to taste. Mix well to obtain a homogeneous mixture.
  4. Take a portion of the potato mixture and spread it on a sheet of parchment paper, giving it the shape of a rectangle about 1-2 cm thick.
  5. Distribute the diced cooked ham and melting cheese over the rectangle of potatoes, leaving a free edge on the sides.
  6. With the help of the parchment paper, gently roll up the meatloaf on itself, sealing the ends well.
  7. Sprinkle the outside of the meatloaf with breadcrumbs and arrange some butter flakes on the surface.
  8. Bake in a preheated oven at 180 °C for about 30 minutes or until golden on the surface.
  9. Let it rest for a few minutes before cutting the meatloaf and serving it.
