Stuffed potato meatloaf
17/11/2023The stuffed potato meatloaf is a hearty and tasty second course that can also be served as a one-dish meal. Here is the recipe for you:
Ingredients
- 1 kg of potatoes
- 2 egg yolks
- 100 g of grated Parmesan cheese
- Salt and pepper to taste
- Nutmeg to taste
- 100 g of diced cooked ham
- 100 g of mozzarella or other melting cheeses, diced
- 50 g of breadcrumbs
- Butter to taste
Preparation
- Start by washing the potatoes and boiling them in salted water until they become soft.
- Once cooked, drain them, peel them and mash them with a potato masher to obtain a puree.
- Add to the potato puree the egg yolks, Parmesan, a pinch of salt, pepper, and nutmeg to taste. Mix well to obtain a homogeneous mixture.
- Take a portion of the potato mixture and spread it on a sheet of parchment paper, giving it the shape of a rectangle about 1-2 cm thick.
- Distribute the diced cooked ham and melting cheese over the rectangle of potatoes, leaving a free edge on the sides.
- With the help of the parchment paper, gently roll up the meatloaf on itself, sealing the ends well.
- Sprinkle the outside of the meatloaf with breadcrumbs and arrange some butter flakes on the surface.
- Bake in a preheated oven at 180 °C for about 30 minutes or until golden on the surface.
- Let it rest for a few minutes before cutting the meatloaf and serving it.
