Stuffed Torta paradiso

The Torta Paradiso is a classic Italian pastry, a soft and light cake that can be filled in different ways. Here’s how to prepare it:

Ingredients

  • 150 g of sugar
  • 120 g of all-purpose flour
  • 120 g of potato starch
  • 150 g of soft butter
  • 4 eggs
  • Grated zest of 1 lemon
  • 1 packet of baking powder
  • A pinch of salt
  • Powdered sugar for dusting (to decorate)
  • To fill (optional):
    • Custard cream, jam, or Nutella

Preparation

  1. Preheat the oven to 180 °C and prepare a cake mold about 24 cm in diameter by buttering and flouring it.

  2. In a bowl, cream the soft butter with the sugar until fluffy.

  3. Separate the yolks from the whites of the eggs. Add the yolks to the butter and sugar cream, one at a time, mixing well after each addition.

  4. Add the grated lemon zest to the cream and mix.

  5. In another bowl, sift the flour, potato starch, and baking powder.

  6. Incorporate the dry ingredients into the cream of butter and yolks, mixing gently from top to bottom to avoid deflating the mixture.

  7. Beat the egg whites with a pinch of salt until stiff peaks form and fold them into the mixture a little at a time, always mixing gently.

  8. Pour the batter into the prepared mold and bake for about 40 minutes or until a toothpick inserted into the center of the cake comes out clean.

  9. Remove the cake from the oven and let it cool completely. Once cool, if you wish to fill it, slice it horizontally to obtain two layers.

  10. Fill with custard cream, jam, or Nutella, then cover with the second cake layer and dust with powdered sugar.

This cake is named after the “heaven of desserts” for its lightness and delicate flavor. Originally, it was prepared with simple ingredients that could easily be found in homes in the past, such as eggs, sugar, and flour. Torta Paradiso is perfect to be filled or simply served with a dusting of powdered sugar.
