Ingredients
- 250 g of all-purpose flour
- 125 ml of warm water
- 1/2 packet of dry yeast or 12 g of fresh yeast
- 1 teaspoon of sugar
- 1/2 teaspoon of salt
- 2 tablespoons of extra virgin olive oil
- Filling of choice (e.g., ham and cheese, grilled vegetables, ricotta and spinach)
Preparation

In a bowl, dissolve the yeast and sugar in warm water. Let it rest for a few minutes until foam starts to form on the surface.

In the same bowl, add the flour, salt, and extra virgin olive oil. Knead until you get a homogeneous and non-sticky dough. If necessary, add a little more flour.

Cover the dough with a damp cloth and let it rise in a warm place for about 1-2 hours or until it doubles in volume.

After rising, divide the dough into medium-sized balls. Roll out each ball with a rolling pin on a lightly floured surface, trying to give it a round shape and not too thick.

Place the chosen filling in the center of each disc of dough, leaving the edges free.

Fold the edges of the dough towards the center, sealing the edges well to create the stuffed focaccia.

Heat a non-stick pan over medium heat and cook the stuffed focaccia for about 3-4 minutes per side, until they become golden brown and puffy.
