Stuffed Burratine
17/11/2023Stuffed burratine are a delight that combines the fresh and creamy pleasure of burrata with various and tasty fillings. Here’s how to prepare them:
Ingredients
- 4 burratine (small burratas)
- 100 g of cherry tomatoes
- Fresh basil to taste
- 50 g of Taggiasca olives (or other olives of your preference)
- 1 tablespoon of salted capers
- Extra virgin olive oil to taste
- Salt and pepper to taste
Optional according to taste or the season, you can also use:
- Grated truffle
- Basil pesto or other types of pesto
- Walnuts or other types of dried fruit
- Speck or prosciutto crudo in small strips
Preparation
- Start by desalinating the capers by soaking them in fresh water for about 10 minutes. Meanwhile, wash the cherry tomatoes and cut them in half or into quarters, depending on the size.
- Rinse the olives well and chop them coarsely, then wash some fresh basil leaves and cut them into strips.
- Take the burratine and gently open an incision on the top part to be able to insert the filling.
- In a bowl, mix the tomatoes, olives, basil, and capers with a drizzle of extra virgin olive oil, salt, and pepper. If you choose to use other ingredients, such as truffle or pesto, add them at this stage.
- Fill each burratina with the seasoned vegetable mix.
- Gently close the opening and arrange the stuffed burratine on a serving plate.
- Finish with an additional drizzle of extra virgin olive oil and a touch of freshly ground pepper.
- Serve the stuffed burratine at room temperature to best enjoy the flavor and creaminess.

Burratine are a smaller variant of the classic burrata. Originating from Puglia, they are appreciated for their thin crust of spun dough and the creamy heart of stracciatella and cream. It is important to handle them with great care to not break the thin outer film that contains them.
