Stuffed Grapefruits

Stuffed grapefruits are a refreshing and delicious dessert or an option for an elegant appetizer. Here’s how to prepare Italian-style stuffed grapefruits, adding a Mediterranean touch with ingredients like honey and almonds.

Ingredients

  • 2 large red grapefruits
  • 2 tablespoons of honey (preferably wildflower or orange blossom)
  • 2 tablespoons of chopped or flaked almonds
  • 1 sprig of fresh mint
  • A pinch of cinnamon (optional)

Preparation

  1. Cut the grapefruits in half crosswise. Using a small knife, gently detach the pulp from the rind, being careful not to break it. Then remove the pulp and seeds and set it aside.

  2. If you wish, for an extra touch, you can place the grapefruit halves on a baking sheet and grill them lightly under the broiler for a few minutes to intensify their flavor.

  3. In a bowl, mix the grapefruit pulp with the honey and cinnamon. Add the chopped almonds, reserving some for the final decoration.

  4. Fill the grapefruit halves with the mixture of pulp, honey, and almonds.

  5. Garnish with the almond flakes set aside and the mint leaves for a touch of freshness.

  6. Serve the stuffed grapefruits chilled, after letting them sit in the fridge for a while if desired.
