Stuffed Frittata

The stuffed frittata is a simple but tasty dish that allows for a lot of creativity. Here I will propose a classic version of a stuffed frittata with ham and cheese.

Ingredients

  • 6 large eggs
  • 100 g of cooked ham cut into cubes or strips
  • 100 g of cheese (mozzarella, fontina, scamorza) cut into cubes or slices
  • 2 tablespoons of milk
  • Salt to taste
  • Black pepper to taste
  • Aromatic herbs of your choice (e.g., chopped parsley)
  • Extra virgin olive oil or butter for greasing the pan

Preparation

  1. Break the eggs into a large bowl and lightly beat them with a fork or a whisk together with the milk. This will help to make the frittata more fluffy.
  2. Add a pinch of salt, pepper, and the chopped aromatic herbs to the egg mixture and mix well.
  3. Heat a drizzle of oil or a knob of butter in a non-stick frying pan (make sure it’s big enough to contain the egg mixture) over medium heat.
  4. Pour the egg mixture into the hot pan and cook for a few minutes, until it begins to set on the edges.
  5. Distribute the ham and cheese evenly over half of the surface of the frittata, leaving a margin at the edges.
  6. When the frittata begins to lift easily from the edges of the pan, with the help of a spatula, fold the unfilled half over the filled half (like you would close a book).
  7. Let the stuffed frittata continue cooking on low heat for a few more minutes so that the cheese inside can melt completely.
  8. Once cooked, transfer the frittata to a serving plate and let it cool for a couple of minutes before cutting and serving it.

You can personalize your stuffed frittata with the ingredients you prefer, such as spinach, mushrooms, sun-dried tomatoes, different types of cheese or cured meats.
