Stuffed Florentine schiacciata

The Stuffed Florentine Schiacciata is a luxurious version of the classic schiacciata (or Florentine schiacciata), traditionally prepared during Carnival. In addition to being dusted with sugar and sometimes decorated with the Florentine lily emblem, it can be filled with custard cream or whipped cream. Here is a version that includes traditional custard cream.

Ingredients for the schiacciata:

  • 300 g of type 00 flour
  • 100 g of sugar
  • 2 eggs
  • 75 g of softened butter
  • 12 g of fresh yeast (or 4 g of dry yeast)
  • 60 ml of lukewarm milk
  • Grated zest of one orange (untreated)
  • A pinch of salt

Ingredients for the custard cream (filling):

  • 500 ml of whole milk
  • 4 egg yolks
  • 100 g of sugar
  • 40 g of flour
  • Lemon zest
  • Vanilla to taste

Preparation of the schiacciata:

  1. In a bowl, dissolve the yeast in lukewarm milk.
  2. In a large bowl, combine the flour and sugar, then add the dissolved yeast, eggs, butter, orange zest, and a pinch of salt. Knead until you have a smooth dough.
  3. Let the dough rest in a warm place until it doubles in volume (about 1-2 hours).
  4. Spread the dough with your hands in a buttered and floured pan to about 2 cm thick, and let it rise for another 30 minutes.
  5. Bake in a preheated oven at 180 °C for about 20-25 minutes or until golden brown (timing may vary depending on the oven).

Preparation of the custard cream:

  1. In a saucepan, heat the milk with lemon zest and vanilla without bringing it to a boil.
  2. In a bowl, beat the yolks with sugar until foamy, then mix in the sifted flour.
  3. Remove the lemon zest from the milk and slowly pour the hot milk over the yolk mixture, stirring constantly.
  4. Put the mixture back on the heat and cook over low heat, continuing to stir until the cream thickens.
  5. Let it cool, covering it with cling film to prevent a skin from forming.

Assembly:

  1. Once the schiacciata has cooled, cut it horizontally to create two layers.
  2. Spread a generous layer of custard cream on one half, then close it with the other half on top.
  3. Dust the surface with icing sugar.

Curiosity

The traditional Florentine Schiacciata is not usually filled, but this filled variant has become popular for its deliciousness. Also, the design of the lily, the symbol of the city of Florence, is made using stencils and by dusting icing sugar on only some parts of the stencil, thus creating a beautiful decorative effect.
