Stuffed crepe rolls

Ingredients
- 125 g of all-purpose flour
- 250 ml of milk
- 2 eggs
- A pinch of salt
- Butter (as much as needed for greasing the pan)
- 250 g of ricotta cheese
- 100 g of cooked and squeezed spinach (or another filling of choice such as ham and cheese)
- Salt and Pepper (to taste)
- Nutmeg (optional)
- 100 g of grated cheese (Parmesan or Grana, according to taste)
- Tomato sauce (optional)
Preparation
- To prepare the crepes, begin by whisking the eggs in a bowl and adding the sifted flour a little at a time, alternating with the milk to avoid lumps. Add a pinch of salt to the batter.
- Let the crepe batter rest for about 30 minutes.
- Heat a non-stick pan and grease it with some butter, then pour a ladle of batter into the pan, distributing it evenly to create a thin crepe.
- Cook the crepe for about a minute or two per side, then transfer it to a plate and repeat the process until all the batter is used.
- For the filling, mix the ricotta cheese with the cooked and squeezed spinach (you can also use frozen, previously cooked), add salt, pepper, and nutmeg for flavor.
- Fill each crepe with a spoonful of the filling, spreading it on one side of the crepe, then roll the crepe onto itself to form a roll.
- Arrange the rolls next to each other in a greased baking dish or lined with tomato sauce if you decide to use it.
- Sprinkle the crepe rolls with the grated cheese.
- Bake in a preheated oven at 180 °C for about 20 minutes or until the surface is golden brown and crispy.
