Stuffed crepe rolls

Ingredients

  • 125 g of all-purpose flour
  • 250 ml of milk
  • 2 eggs
  • A pinch of salt
  • Butter (as much as needed for greasing the pan)
  • 250 g of ricotta cheese
  • 100 g of cooked and squeezed spinach (or another filling of choice such as ham and cheese)
  • Salt and Pepper (to taste)
  • Nutmeg (optional)
  • 100 g of grated cheese (Parmesan or Grana, according to taste)
  • Tomato sauce (optional)

Preparation

  1. To prepare the crepes, begin by whisking the eggs in a bowl and adding the sifted flour a little at a time, alternating with the milk to avoid lumps. Add a pinch of salt to the batter.
  2. Let the crepe batter rest for about 30 minutes.
  3. Heat a non-stick pan and grease it with some butter, then pour a ladle of batter into the pan, distributing it evenly to create a thin crepe.
  4. Cook the crepe for about a minute or two per side, then transfer it to a plate and repeat the process until all the batter is used.
  5. For the filling, mix the ricotta cheese with the cooked and squeezed spinach (you can also use frozen, previously cooked), add salt, pepper, and nutmeg for flavor.
  6. Fill each crepe with a spoonful of the filling, spreading it on one side of the crepe, then roll the crepe onto itself to form a roll.
  7. Arrange the rolls next to each other in a greased baking dish or lined with tomato sauce if you decide to use it.
  8. Sprinkle the crepe rolls with the grated cheese.
  9. Bake in a preheated oven at 180 °C for about 20 minutes or until the surface is golden brown and crispy.
